The crema on your espresso tells you everything about the quality of your shot. Perfect crema should be:
- Golden-hazel: Not too light, not too dark
- 3-4mm thick: Thick enough to hold sugar on top
- Slow-dissipating: Should last at least 2 minutes
White spots indicate under-extraction; dark cracks mean over-extraction.
